The skinny: Katherine McCune, an on-campus nutritionist, is available to help students battle “the freshmen 15,” the extra fifteen pounds that are easy to put on during the first year of college. Not only does she teach students how to cook simple meals on a George Foreman grills but offers suggestions on where to eat and what to order at nearby restaurants, such as Duke’s Barefoot Bar, John’s Garden and even McDonald’s.

The skinny: An organic salad bar, organic stir fry, steel cut oats, eggs whites, brown rice and grilled veggies are just some of the offerings available on the campus, which has seven restaurants and features Beefless Thursdays at residential restaurants. The school makes almost all of its own salad dressings and bakes its own pastries, meaning healthier content. More vegan and vegetarians offerings this year.

The skinny: Every major food chain on campus (El Pollo Loco, Subway, Carl’s Jr., Sbarro, etc.) provides on-site brochures that list the nutritional campus of their food. Sbarro’s low-carb pizza and diet cheese show that fast-food restaurants are trying.
